A programme on BBC Radio 4 today caught out ears and for anyone who eats honey regularly or even now and then it is well worth a listen - now on BBC Sounds.

The programme was made as part of the series the Food Programme - The Honey Trap. It runs for just over 42 minutes but its very interesting revealing a lot of details about the frauds in the honey trade and how it affects various countries.

What the Problem Is: Adulteration of Honey
Common Forms of Honey Adulteration

Honey adulteration refers to dishonest practices that misrepresent honey's quality, purity or origin. Common issues include:

Adding cheap sugar syrups (e.g., corn, rice, cane or beet syrups) to increase volume and profit.

Dilution of honey with inexpensive sugars to reduce production cost.

Mislabelled origin or blending of honeys from different sources without accurate labelling.

Inappropriate bee feeding during nectar flows (feeding bees sugar syrups during honey production) that alters honey composition.

Because honey naturally is mostly sugar, detecting added sugar syrups is technically very challenging without advanced testing.

Scope of the Problem

A major EU study found nearly 46 % of honey imports tested were suspected of being adulterated with sugar syrups.

UK honey imported to the EU in that study had a very high suspicion rate, although this may partly reflect the fact many imported honeys are blended or repackaged in the UK after coming from overseas.

Separate UK tests have found very high failure rates for authenticity checks on supermarket honey, with most samples flagged as suspicious for adulteration.

Why It Matters

Consumers are misled, paying for a premium product that is partly cheap sugar.

Honest beekeepers struggle commercially due to unfair price competition.

Market confidence and reputation suffer, reducing demand for genuine honey.

Challenges in Detecting Adulteration

Technical Difficulties

Honey composition varies widely due to floral source, region, season and processing.

Most traditional markers (sugar ratios or simple lab tests) aren't reliable enough for regulatory enforcement.

Methods like Nuclear Magnetic Resonance (NMR) are used widely for suspect testing but are not yet fully accepted as definitive by UK or EU authorities.

Spatial Offset Raman Spectroscopy (SORS) to detect adulterants without opening containers.

DNA barcoding and machine learning to detect sugar syrups even at very low levels.

These methods could eventually be adopted by industry and regulators to screen honey more efficiently before it reaches shelves.

Organisations like the British Beekeepers Association (BBKA) are:

lobbying for clearer labelling (e.g., listing all countries of origin and blend percentages).

show all countries of origin of honey blends on the label (not just broad EU/non-EU).

Although the UK is no longer in the EU, such frameworks influence trading standards and expectations in UK supply chains as well.

Honey fraud—especially through the addition of cheap sugar syrups—is a major challenge globally and in the UK. Detection is technically complicated due to the natural variability of honey and limitations in current testing methods. The UK government, regulators and researchers are responding with new frameworks, advanced scientific testing methods, and pushes for better traceability and labelling to protect consumers and honest producers.

Top Honey-Producing Countries in the World

According to recent production data, global honey output is dominated by a few major countries:

World Top Producers (approx. 2023/2024):

China - by far the largest producer, accounting for around a quarter of global honey production.

Türkiye (Turkey) - one of the biggest producers and exporters.

Ethiopia - emerging as a significant producer.

Iran - strong production in the Middle East.

Argentina, India, Russia, Brazil, United States and Mexico - also in the global top ten.

These patterns are broadly consistent with FAO global honey statistics.

Note: Different sources vary slightly in exact ranking and tonnage, but China is consistently #1 by a large margin.

Where the UK Sits in Global Honey Production

The United Kingdom is a relatively small producer of honey compared with these global leaders.

UK production has historically been modest (several thousand tonnes per year) and is far below the top global producers.

Most of the honey consumed in the UK is imported, with estimates that roughly 85-95% of UK honey consumption comes from abroad.

In Europe, the UK is a significant market and importer, but not one of the largest producers.

So, on a global production ranking, the UK is much further down the list (not in the top producers), whereas China, Turkey, and a few other countries produce many times more honey than the UK.

Where UK Honey Imports Come From

As noted in UK import data:

The majority of honey imported into the UK comes from China (by far the largest source).

Other notable sources include Mexico, Poland, New Zealand, Vietnam, Germany and others.

This global mix reflects UK dependency on imported honey to satisfy domestic demand.

Origins of Suspected Adulterated Honey

EU-wide investigations into honey authenticity provide insight into where potentially adulterated honey often originates:

EU "From the Hives" Investigation (2021-2022)

An EU coordinated control action examined honey imports and found:

About 46 % of tested honey consignments were suspected of adulteration (i.e., not meeting honey composition rules).

In terms of absolute numbers of suspicious consignments:

China accounted for the highest number of samples flagged (about 74 %).

In terms of relative proportion of suspicious batches:

Turkey had the highest proportion of suspicious samples among its consignments (93 %).

Honey labelled from the UK also had a high suspicion rate (100 %)—but this is widely interpreted as honey produced elsewhere, imported to the UK, blended or repackaged, and then sent on.

This means the investigation linked adulteration concerns most strongly with honey originating from:

China (highest volume of suspicious samples)
Turkey (very high rate of adulteration within its samples)
Other countries represented included Ukraine, Argentina, Mexico, Brazil in smaller numbers.

The UK's high "suspicion rate" in that context is not an indication that UK-produced honey itself is adulterated, but rather that honey labelled in or passing through the UK often originated abroad and was flagged under EU controls.

Why These Trends Matter

Countries that produce large volumes of honey and export to global markets also tend to be the ones whose honey appears more frequently in authenticity testing simply because they supply more honey overall.

Because the UK imports most of its honey, it is exposed to global supply chains where adulteration risk is higher, compared with countries that produce a larger share domestically.

Can consumers tell if honey is adulterated?

The honest truth

It is very difficult for consumers to reliably detect adulterated honey at home.
Modern sugar syrups are designed to closely mimic natural honey, and many "internet tests" are unreliable.

That said, consumers can reduce risk by knowing what doesn't work, what helps a bit, and what really matters.

Common "tests" that do not work

These are widely shared but scientifically unreliable:

Water test (honey sinking or dissolving slowly)

Flame/matchstick test

Crystallisation test (some pure honeys don't crystallise; some adulterated ones do)

Taste tests alone

Adulterated honey can easily pass all of these.

Things consumers can look for (risk-reduction, not proof)

Read the label carefully

Prefer honey that states:

"100% UK honey" (not "packed in the UK")

Single origin (e.g. "UK wildflower honey")

A named producer or beekeeper

A harvest year or season

Be cautious of:

"Blend of EU and non-EU honeys" (very broad)

No mention of origin beyond “packed in...”

Very low prices (often below the cost of genuine production)

Be realistic about price

Producing real honey is labour-intensive.

As a rough guide (2025 prices):

Genuine UK honey: usually £8-£15 for 340–454 g

Very cheap honey (£1–£3 for 340 g): high adulteration risk

Cheap honey isn't automatically fake, but it is statistically higher risk.

Consistency and flavour

Pure honey usually:

Has complex flavour that varies by season and flowers

May change texture over time

Tastes different batch to batch

Highly uniform taste and texture year-round can indicate heavy processing or blending.

Why consumers can't fully test honey themselves

Honey is naturally:

80% sugars

Highly variable by flower, weather, and region

Detecting adulteration requires:

NMR spectroscopy

Stable isotope analysis

DNA and chemical fingerprinting

These are only available in specialist labs, which is why regulation and sourcing matter so much.

How to buy honey you can trust in the UK

Best option: buy direct from UK beekeepers

Where to look:

Local farmers' markets

Farm shops

Village shows and food fairs

Direct beekeeper websites

Ask:

“Do you keep the bees yourself?”

“Where are the hives located?”

“What flowers are in this honey?”

Real beekeepers can answer immediately.

Many sell honey directly

Local BBKA associations often list members selling honey

Searching for “BBKA local association honey” is one of the safest routes.

Certified and specialist honeys

Some higher-trust categories:

Raw UK honey (minimally processed)

Single-estate or single-apiary honey

Organic UK honey (still rare, but tightly controlled)

Be aware: “raw” and “organic” do not automatically mean UK-produced, so still check origin.

What about supermarket honey?

Supermarket honey is:

Usually imported and blended

Often ultra-filtered and heavily processed

More exposed to global adulteration risks

If buying supermarket honey:

Prefer clearly labelled single-country origin

Avoid vague blends

Expect lower flavour complexity

This doesn’t mean all supermarket honey is fake — but it carries higher uncertainty.
